Mulled Elderberry Wine

We pick elderberrries from the trees that grow wild on the station and around the district to make this wine.

1.25kg elderberries, weighed without the stalks

4.8 litres water

1.5kg sugar

5 teaspoons yeast

Crush the berries and pour boiling water over them. Stir well. Leave to soak for 12 hours. Crush well once more then strain through fine muslin and put the juice through a jelly bag.

Bring the juice to the boil then turn off the heat at once.

Pour into the fermenting vessel and add the sugar immediately, stirring till it is all dissolved. Allow the brew to cool and then sprinkle the yeast on top and stir in.

Cover and leave to ferment for a minimum of 14 days, after which proceed to bottling. Fermenting can take much longer. In any event, do not bottle till the wine has worked out completely and there are no more bubbles rising, otherwise your bottle could explode.

To mull: pour 2 bottles of wine (about 1.5 litres) into a large saucepan. Add 1 cup of sugar, a few whole cloves, 1 cinnamon stick and 1 sliced orange then warm through to dissolve the sugar and infuse the spices.
